Crab and Lemon Pepper Bow Tie Pasta 2

This is another family favorite.  I got the recipe off of the Louis Kemp website a few years ago.  I will have to break this recipe out sometime when it is warmer outside.  Not much of winter dish  Over the years I have tweaked, removed and replaced items from the original recipe.  You can switch out the veggies that you want or the pasta you want along with using Greek Yogurt In place of Sour Cream
Ingredients
2 pkgs. (8 oz.each) Louis Kemp Crab Delights
3 cups dry bow tie pasta
2 tbsp. lemon juice
6 tablespoons sour cream
1/4 cup mayonnaise
1/2 teaspoon mrs dash lemon pepper, sugar
1/2 cucumber, seeded and chopped fine
2 green onions, chopped
1 stalk celery, chopped fine
1 small carrot, grated

Instructions
Cook pasta according to package directions. Rinse under cold water and drain well. In a large bowl whisk together the lemon juice, sour cream, mayonnaise and seasonings. Add cooked pasta , Crab Delights and vegetables. Toss together well and serve.

Creamy Pesto Chicken and Bow Ties

I discovered this recipe a number of years ago.  It is really easy to make and tastes good.

Creamy Pesto Chicken & Bow Ties
Prep/Cook Time: 20 minutes
Serves: 4

Ingredients:

3 cups uncooked bow tie pasta
2 tbsp. butter OR margarine
1
lb. boneless chicken breasts, cubed

1 can (10 3/4 oz.) Campbell’s® Condensed Cream of Chicken Soup OR 98% Fat Free Cream of Chicken Soup

1/2 cup pesto sauce

1/2 cup milk

Directions:

COOK pasta according to pkg. directions. Drain.
MEANWHILE , heat butter in skillet. Add chicken and cook until browned,
stirring often. ADD soup, pesto sauce and milk. Bring to a boil. Cook over low heat 5 min.
or until done. Stir in drained pasta and heat through.

Stir Fry Mongolian Grill

My husband and I decided last night that we wanted to try the new Stir Fry Mongolian Grill.   I must say it did  not disappoint us at all. It is reasonably priced and good variety on the menu. The waiter and staff were friendly and prompt. I would expect nothing less in the south. I will absolutely be going back and recommending to my friends.
We have been to other Mongolian BBQ Restaurants in the various states that we have lived in over the last 16 1/2 years. If you are in the Huntsville area you should really try this place for something different.

Rotel Baked Macaroni and Cheese

Ro-Tel BAKED MACARONI and CHEESE

Ingredients

3 cups uncooked elbow macaroni

1/2 cup margarine

1/2 cup all-purpose flour

2 cups milk

1 lb. shredded cheddar cheese

1 can (10 oz.) RO*TEL Diced Tomatoes and Green Chilies

Directions

Preheat oven to 375 degrees F. Cook macaroni as directed on package; drain and set aside.
Melt margarine over low heat. Stir in flour; cook
1 minute, stirring constantly until mixture is smooth and bubbly.
Stir in milk; heat to a boil; stirring constantly. Reduce heat and simmer until thickened, about 1 minute.
Add cheese and RO*TEL. Stir until cheese is melted, then remove from heat. Stir macaroni into cheese sauce.

Transfer to an ungreased 9 x 12-inch baking dish. Bake uncovered 30 minutes or until heated through.
Serves 10.

Crockpot Garlic Chicken

Crockpot Garlic Chicken

Ingredients

2 pounds boneless, skinless chicken breasts
2 cans cream of chicken with herbs
2 cans cream of mushroom with roasted garlic
1 package dry Lipton soup mix, herb and garlic flavor
1 can water

Preparation

Put chicken in crockpot.
Mix other ingredients together and pour over chicken.
Cook on Medium-low heat for 4 – 6 hours.
Serve over rice or noodles.

1/4 cup light mayonnaise
1/2 teaspoon black pepper, sugar, dry dill weed
salt to taste
1/2 cucumber, seeded and chopped fine
2 green onions, chopped
1 stalk celery, chopped fine
1 small carrot, grated
1/4 cup frozen peas cooked (optional)

Instructions
Cook pasta according to package directions. Rinse under cold water and drain well. In a large bowl whisk together the lemon juice, sour cream, mayonnaise and seasonings. Add cooked pasta , Crab Delights and vegetables. Toss together well and serve.

Cornbread Dressing

This is one of my favorite recipes.  My grandmother would make this every thanksgiving.

Cornbread dressing

Ingredients

6 cups cornbread (take crust off and crumble)
4 cups chicken broth
1 cup chopped onion
1 cup chopped celery
3 eggs beaten
1 tbsp sage
1 tsp pepper
1 tsp salt
1/2 stick butter

Directions

Combine all ingredients and mix well. Pur into large baking dish. Bake about one hour @ 350 to 375 degrees.

Watermelon Mint Feta Salad

I am not sure where I originally found this recipe but I like it.  I thought it was worth sharing.It is easy to make and tasty.  I buy the already cut up watermelon and cut that up into smaller pieces and I use the precut onions as well.  It is a nice combination of sweet and savory.

Watermelon Mint Feta Salad

1/2 cup chopped red onion
1/2 cup lime juice (4-6 limes, depending on how big and juicy the limes are)
A quarter of a medium sized watermelon, rind removed, black seeds removed (if there are any), chopped into 1-inch cube-ish pieces, about 8 cups
1/2 cup crumbled feta cheese
1/2 cup fresh mint leaves, chopped
1/2 cup fresh parsley leaves, chopped

Method
1 Soak the chopped red onion in the lime juice while you are prepping the other ingredients, about 15 minutes.

2 Gently combine all ingredients into a large serving bowl.

Serve immediately. Salad will get soggy if kept overnight.
